Our approach to sustainability

At our restaurant, we strive to be role models in sustainability and eco-friendly work. We strongly believe in contributing to a sustainable society and are actively working to reduce our climate impact through various initiatives and actions. Here are some of the actions we are taking to achieve this:

• Brewing beer
  We utilize the surplus hot water from our beer production, which contributes to a more resource-efficient operation. By brewing our own beer on site in the cellar, we reduce the need to transport finished beer from breweries to our restaurant. Producing our own beer also gives us full control over the ingredients and the brewing process, ensuring the highest possible quality and sustainability. Producing beer locally also means we can adapt production to demand, reducing wastage and overproduction.
• Local ingredients
  We use local ingredients as much as possible. For example, the meat we serve in the fondue comes from cows in Sjöbo, and the fish is MSC/ASC-labeled to ensure sustainable fishing. We take food waste into account by carefully planning our purchases to reduce excess and residual products.
• Catering with electric vehicles
  We deliver our catering with electric vehicles to minimize emissions from transport and contribute to a cleaner environment.
• Own laundry of linen tablecloths and napkins
  We wash all our linen tablecloths and napkins ourselves and use eco-labeled detergents (Nordic Swan Ecolabel) to ensure sustainable handling.
• Environmentally friendly packaging
  We work with our suppliers to always be at the forefront of disposable materials that have minimal environmental impact. Our packaging is designed to be as environmentally friendly as possible.
• Minimal transport impact
  We brew all our own beer in the cellar, which means we can keep our transport emissions to a minimum.
• Nordic Swan Ecolabeled cleaning products
  We use at least 90% Nordic Swan Ecolabeled cleaning products in our daily operations to reduce our chemical use and its impact on the environment.
